Does anybody have any info on how big front ring I could run on a SRAM Eagle AXS rear derailleur with the 10-50T cassette?

SRAM has a 38T on the site, AbsoluteBlack go all the way to 48T....

As big as you want. The rear mech/cassette won't be able to tell anyway.

Just need to make sure your chain is the right length.

The limit won't be the chainring maker, the derailleur setup but the chainstay space for the chainring. A 40T chainring on most all-mountain/enduro/trail bike frame will rub on the drivetrain chainstay. Some cross-country frame might accept bigger than a 36T but it is a case by case depending on the frame you have.
