Just finished my first attempt at a lighter weight MTB.
Came in under budget but over weight. (~10kg). Frame is light enough (~1200g) but front shock (120mm Reba) , dropper (125mm KSlev), large cassette (11-42), larger tires, wheels (2.6" on 40mm rims) all add up. I could have shaved 400g going with SRAM XX eagle instead of XT groupset but I like XT and the price was less than half of SRAM. 27.5 wheels are about 1600g with 40mm wide rims for running larger tires.
On my next build I would like to get under 9KG, but how? What would you suggest?

narrower rims and narrower/lighter tyres (or have you already gone for 2.6 instead of 2.8?). Then a shorter 100mm dropper. Then less fork travel (the reba 120mm is what? 1.57kg? - pretty light).
I can't tell which bontrager tyre you are running, but a 2.6WT Rekon 3C maxx terra is 730g.
I'm of the opinion that 40mm inner width is too wide for a 2.6" tyre, but it probably depends on the model of tyre/profile. 40mm rims are for 2.8-3" plus tyres.

I got the 40mm rim in case I wanted to run 2.8", the frame can take up to 3". For the next build going to limit it to 2.6 so thinking 35mm rims and non-boost wheels.
The Reba came in around 1600g with axle. Not sure how much lighter a Reba with 100mm will be however, I thought they used pretty much the same parts.

I think you could easily find lighter, reliable bars, stem and grips that don't break the bank. Extralite grips, Wren stem, Easton EC90 bar maybe?
