I am looking to get build some new mountain bike wheels. They will be 28 hole, 142*12 rear axle 15 mm front. Disc. And they will be running xx1. I would like suggestions on what hubs should I get? I don't want anything ridiculously expensive or exotic. But I would like them to be pretty light. Can be straight pull or j bend.

american classic is pretty light and affordable and comes in the required configurations

I love my American Classics but Hope Pro II are a lot less but heavier and noisier.
For certain parts stiffer is more important than lighter.

Supposedly Hope have changed the pawl springs in the Pro II Evo (which is the current model) so they're a lot less clicky.

Depends where you are really.

Here in the uk, you're never far away from a hope dealer if things go a bit pear shaped. They're not bad priced, quality is good and after sales service is excellent.
Current models are available in any configuration but not sure in 28h

Personally I can't tell if the new ones are any quieter than the old type springs and pawls. They're quieter than a king for example.

DT 340 seems a decent hub and not too expensive like the 240. Maybe worth considering.
From what I've seen if the AC stuff, they appear a bit weak.

I've got a 28h Pro II rear hub on my bike at the mo. Website suggests stock drillings are 28/32/36h: http://www.hopetech.com/page.aspx?itemid=SPG241&tab=specification

for your interest, american classic hubs weight 234g and 117g in 142x12 and 15mm configuration, respectively. Verified weights on my scale. Built with stans crest 29er and sapim lazer spokes, the set weights 11445g without the rim stickers!

You can get DT350 straight pull hubs fairly cheaply on eBay. They fit all of your needs, 28H, thru-axles F&R and XX1 driver compatible.

Sure, there are other options but AFAIK none of the other good 'cheap' hubs (eg. Novatec) have XX1 drivers available at the moment.
