I could be wrong but usually star nuts are used on metal steerer tubes where scratching them doesn't matter but you use expanding bungs with carbon steerers as they won't scratch the carbon and risk introducing stress risers.
Size wise it should work but not sure you'd want it for a carbon steerer on a Canyon fork.

you can get expanders just about anywhere - just keep in mind is it a 1 1/4 (CF SLX) or 1 1/8 (Aeroad) fork ?
