I use latex tubes in full carbon clinchers on flat (or slight rolling hills) rides without issue. If I had used them today (27 degrees C and 15% descents with a couple of nasty hairpins) I'd probably have had to have walked home (if indeed, I was still able to walk!).....latex and serious heat build up are a bad combo....other than that....just use your brains
Updated: Racing again! Thought this was unlikely! Eventually, I may even have a decent race!

Heat can burn a hole in the inner tube. Not something you look forward to during high speed descents...
