How much weight can I take off this bike?
Currently Trek Madone 5. Ultegra Group. Easton EA 90 wheels.
I am planning on Dura Ace 7900 group set. I have both deraileurs. How much will that save me vs. Ultegra group.

Not much. Use the listing to do an estimate but you are talking about 100g max. Wise tyre and tube choices give 200+g depending on what you are running now (50+g each tyre and each tube is possible). Convert any heavy rimstrips to veloplugs (could save 30g).
Easy ones are to upgrade your cranks, pedals, saddle and bartape. The bartape and then the saddle are most affordable. NOTE: DO NOT Sacrifice comfort for weight.....it's not worth it
Alternatively....just get a really hot pair of race wheels when you can. That will drop weight quickly and improve rotational weight and handling too. Ultegra is OK gear (tho not light) so don't rush to replace it.

Keep the Ultegra group set. The DA front mech sucks by comparison as it's too soft. The only place you'll save noticeable weight between the two are the sti's and chainset (which there are lighter option than DA).
I agree with the ther comment on where to strip weight. After that you could look at ti skewers and upgrading the cockpit (stock bars and stem aren't the lightest).
