How would you consider a saddle is worn-out?

Any major tears would be considered worn out to me.

Saddles change over time. When you no longer get along with it sagging like a hammock (as yours do), in time all saddles will loose their support in the middle, some may go really fast (some of my SLR's did, others didn't). But some like the sloppy hammock experience too, so it's really up to you. If you don't feel okey with it, get a new one.

I hate breaking in new saddles, so I try to hang on to mine as long as possible.
But I will replace them when they brake, such as the plastic support cracking, or when they become so worn out they start to resemble a hammock.
Your saddle looks like it is sinking in the middle, but as I am not familiar with that saddle, that could be its natural shape.

This shape of the saddle is OK. I have the exact same saddle.

I have the same Aspide Saddle in about the same shape. I'm expecting it to last quite a while longer still.

Well mine's currently held together by a mix of gaffa-tape and electrical tape. Asthetics be dammed!
