Got a Specialized trial saddle on mine at the moment (in red and clashes with everything else).
Once I have the seat sorted, ill get some pics up.

Does anyone can recommend about the riding on the 25c vs the 23c. Does it make a huge difference in rolling resistance griping and ride feeling?

Yes, I run 25c with exactly the same frameset. I can't say for certain about the switch, because I also used a wider rim. Having said that the combo of both wider rim and tire felt as if there's lower RR.

Don't get the Mavic tyres, they're crap. If you want best performance/puncture resistance get some GP4000 25s or if you want a comfy ride get some open paves. Either will be way better.
