Conclusion:
I will be using a 2nd heavier weighted seat and post that can be used if they are weighing. Primary reason is it is a quick change unlike other parts. Skewers - are good, but not enough weight. Cassette - maybe 200g. Seat setup seems easiest.

Otherwise - riding the normal bike most the others are.

adding functional weight is easy.

the heaviest functional groupset you can get (105 or new tiagra,) skewers, alloy cockpit, a heavy chunky stem ( that will be stiff as hell.) skewers, casette, a hardier chain ( think 105 or tiagra level instead of DA.) heavier saddle and seatpost, and pedals . I think all these shhould gain you a good 300-500 odd grams.

No idea on why hasn't anyone suggested:

1. heavier wheelset - just use tires that have low rolling resistance
2. cranks
3. saddle (very cost effective)

These parts are the heaviest on the bike.

Drop weights in the seat tube. You can easily add / remove as necessary.
