I've just bought myself some Planet X 50mm Carbon wheels for the new season. Rode them for the first time and nearly died. The difference from Alloy rims to Carbon is huge.
What brake blocks do you recommend ?

While I don't like them on the road because they are too grabby Swiss Stop King (yellows) are great for cross bikes.

also yellow kings but would go back to alloys, especially in muddy conditions

Ive seen the Yellows but was looking for alternstives as they are really expensive

Almost half the price w/like brake characteristics. In the dry, they arent grabby at all.

I had a team mate switch to them, from SS yellows; he claimed a huge braking improvement.

Just picked up a set of carbon wheels to race CX on tubs next season. Bike has basic Shimano centrepulls and pad holders. Are there carbon pads for these types of pad holders, or do you use something like the Kool Stop Cross Pad holders and road carbon pads?

You get some pretty decent life out of the yellows so even though they are kinda pricey, they're worth it.
