Buying a pair of padded shorts is probably a good idea. Comfort makes a huge difference in endurance and speed, especially on longer rides. A lot of lighter saddles are meant add comfort through shape and a more flexible shell rather than padding.

When I built up my bike, I was on a budget and trying to find lightweight items at good prices. SRAM Rival was a clear choice for me. As you mention earlier, the controls are a bit less clear than Shimano, but once I got used to it, I found it better than the 105 shifters on my last bike. The price and weight are also very nice.

As far as pedals go, consider road specific pedals if your shoes will allow. I use Look Keo Easy (254 g actual) and find them to work well for the price at a lower weight than a lot of pedals 3 times the price.

The marketplace is a great place to pick up some things too. Used is a good way to go to get quality items at affordable prices. Most things I have bought were at a third of retail or less.
