Food, Nutrition and Sports Performance II: The International Olympic Committee Consensus on Sports Nutrition (Paperback)
Ron Maughan, L.M. Burke, E.F. Coyle

Keep in mind it will be obsolete soon
We are in the infancy of understanding sports nutrition

Is there some kind of prize here for depriving yourself of as much food and water as possible during a ride?

Riding dehyrated sure feels like you are suffering. You are slow but at least you feel like you are suffering. A bit like turboing without a fan.
