I find F1 races quite enjoyable on the trainer. Push when your favorite driver is pushing. Sprint out of slow corners and match the sound of the trainer with the sound of the cars. At least until they shift.
For enjoyable races, I suggest 2008 Italy, 2011 and 2014 Canada, 2014 and 2015 Hungary. 2013 Silverstone if you wanna see some explosive tyre blowouts.
The races take around 1:45 to 2 hours which is more than enough for my use.

@robrud - apologies for the delayed response. It is a tad high, but I was surprised that it didn't feel uncomfortable for workouts. I'll probably pull it off the wall and lower it, but only about 6".

I've used Zwift a number of times but for some reason it never captivated my attention.
I would certainly use it to ride with local friends and teammates, but other than that I probably won't use it.
I guess I would say in the off season, stick to what you can endure the longest with without going mad.
I use Tacx and it works pretty well for early season sessions.

@jvanv8 - That's an awesome setup. is that an entire basement dedicated to the bike / screen / projector?

priorities - check.
