Curious question when sprinting, need advice

Lean down towards the handlebar when sprinting.

I personally end up lifting the front end. Really struggle with sprinting out of the saddle on the drops.

You should only be able to touch the bars with your knees if you rotate your feet waaay forward. Sounds like you need more reach.

A better balance between pulling up with your trailing leg vs. pushing down with your forward leg will mean you don't have to pull up so hard on the bars. It's also easier to keep the bike balanced front-to-back this way since the forces are at the center of the bike instead of at the front on the handlebars, so there is less torque lifting the front or back end off the ground.
