A light bike doesn't replace good fitness.

Does anyone do, or have an opinion about, training off the bike. By this I mean gym work/weights or any other sort of muscle-based workout (not cardio) and particularly core/upper body. If so how is this incorporated into your training?

Push-ups for the upper body and triceps.
Crunches for the abs.
"Skydiver" for back muscles.
Do 3-4 sets of each, takes about an hour. Twice a week. I don't want too much muscle :D
