I'll be running these on the Road with 25 or 28mm Clincher Tires with 32 or 28/32 spokes (I'm a big guy) so one of the biggest considerations is whether or not the Carbon Clincher Rim can take enough pressure.

I would like to run Tune Mig/Mag with Enve 29XC rims - but I'm not sure they will take the pressure - they are rated at 60 psi but that's for a Mountain tire.

What about Stan's Iron Cross rims?

Any other suggestions?

You can run a Reynolds Assault CX Disc. Pleanty strong even fo rus bigger guys at 24h and are rated for 160psi in clincher.

60 psi will be no problem for that rim.
I wonder what the profile of your tire will look like considering that rim/tyre combination? It should corner pretty well.
