I had them build me a bike based on their All Road, but with custom geo, flat mounts, and a few other little changes. I'm planning on running a Lithic Hilli fork, other than that I haven't even nailed down wheelsize. Any thoughts on 9120 vs waiting for 8020? Likely going to do Rotor 3D+ cranks with a 46/30 direct mount ring. Handlebars I am pretty set on Easton EC70AX as it looks to have a good shape and flare for this kind of bike.

You'd rather buy Rotor Aldhu crank.
Yupp, skip DA and go for Ultegra. Much better value and work just great.

You may consider 3T SuperGhiaia handlebars

I run 155mm arms so Aldhu isn't an option for me. I looked at the quoted weights and it looked like only a 147g difference for shifters, brakes and derailleurs for the hydro setup. That seems really minimal but if its the case that makes the decision pretty easy. The 3T bars look good but I haven't seen them available yet.

I checked and looks like the SuperGhiaia is about a month out, same with Ultegra. Now I have to decide if I want to wait a month to build this.

You can also use Easton EC90SL crankarms and axle (not Eastons spider), Kent Erikesens custom spider 110BCD (63 grams) and Praxis Buzz chainrings (48/32) or Wickwerks 44/34 combo.
You can use Shimano Ultegra 8000 11-34 cassette.
This saves you a bit of weight to.
Complete crankset with chainrings is 544 grams with Wickwerks combo (i have this combo myself)

But if you don't need a wider chainline, you should use standard Easton.
Kent Eriksen will give you a wider chainline which is excellent for 12*142.
No more chain dropping on the inside.

Waiting is a drag amigo, but if you really want these components, these are your best choices.
When i bought my bike, i bought it built as i wanted. I had to wait + 4½ month for EU importer to get the No tubes Avion Pro i wanted.
That was a true pain. There is no idea using DA on this. Better use Ultegra and buy a premium crankset.

I had joint troubles from combination of illness and biomechanical problems that kept me off the bike for a year and a half. I did months of physio and still couldn't ride, and tried short cranks as a last ditch effort to get back on a bike. I've been back at it since February with no issues since I went with the shorter cranks, and it actually seems to have improved my general joint health off the bike.

Aha, hopefully you have found a solution that works long term.
I have never tried shorter than 170mm.
I think i could learn to pedal with 170.
But i don't dare invest in 170 when i buy a new crankset, so i jump 172.5mm.

I also have some other things i'd need to sort out.
Not easy as the components existing really isn't made for people with biomechanical issues.
Worst is cold weather, i get overly stiff.
Also noted that my flexibilty has decreased which suggest a shorter reach and higher stack.
But this makes it really difficult finding a fit for both on the hoods and in the drops.

According to the Zinn formula I should be on between 154-159mm despite being 5'9". I have short legs for my height but not abnormally so. Its worth looking into just to see if it puts you in the ball park. I ran 172.5mm up until that point. Partially because I worked on flexibility during my time off and partially just because it turned out to be more comfortable, but I ended up with more reach and about the same drop (although a higher saddle) after going to the short cranks.

I think I'm just going to wait the 6 weeks or so for R8020. I don't think the price jump justifies 147g and I can put that difference towards nicer wheels that will have a bigger weight savings. If I get antsy maybe I can pick up some R685 parts second hand.
