The 'liveliness' of the bike is largely dependent on the steering geometry, not the height of the BB. It's just that many bikes with slow steering also have low BBs, and you are assuming that the low BBs are responsible for the lack of liveliness. A bike with fast steering and low BB should feel better than a bike with fast steering and high BB.

I'm getting a custom bike built and I'm going for a 80mm BB drop 8)

Looks like a nice build, but I'm not sold on the Domane SLR for gravel/off-road duties, given the adjustable IsoSpeed (and the potential to get sand and dirt inside the mechanism). Trek is marketing the SL version for gravel (and they make a specific gravel version of the bike, which, BTW, has better kit than the non-gravel), but I would be remiss to take the SLR off-road. Good luck, it looks like a nice bike.
