Convert triple to double crankset ??

I have a Cannondale CAAD8 cross bike that has a FSA Gossamer triple crank set, I am pulling all of the Shimano components off and going to put a old Sram Red setup on this bike as I use it as my gravel trail bike. My question is can I cross the existing cranks to a double? I am hoping that I can put a 10 speed cassette on the rear wheel as I believe it is currently 9-speed I will need to check on that. Please advise on what I would need to do to convert and get his new setup running.

I ran a Gossamer triple as a double with 46/30 TA chainrings in the small/middle position for my Gravel/CX/Commuter.

40/30 in the pics. I think it could go down to 26 or 28 on the small ring. That's lower gearing and probably still lighter than a Force 1 setup (which I run now).
