Here is my planned drivetrain:

1x11
ST-R785 Di2 hydraulic shifters
Ultegra 11-32 cassette
Wolftooth Drop-Stop Chainring
XTR Di2 Rear Derailleur (medium cage)

Will this combination work? I have read in some places that the XTR RD will work with the ST-R785 shifters, but I have also read that it won't work unless the front derailleur is present, which of course it won't be for a 1x11 setup. Any first-hand experience?

Thanks.

Yes it works. A friend of mine is running that exact set-up on a Santa Cruz Stigmata. He raced it in about 16 CX races and now a few gravel grinders with no problems.

xtr can work 1x and what you proposed should work.

road derailleurs cant do 1x which is where you would have read that you need to use the FD.

the shifters in di2 can be swapped between road and mountain, but not the derailleur.

I'm running that setup with 10-42 cassette and it works as it should work.

My Rock Lobster has a 42t Wolftooth Dropstop, XTR Di2 RD, 11/40 cassette, and R785 shifters. It's a fantastic set-up.

Oh yes they can.

Ultegra di2 rear derailleur 1*11 works just fine for me.

XT Di2 should be out fairly soon as well if you wanted to save some $$ on that rear derailleur

Had been cooler if you could use that combo but also including the FD and road 2*11 crankset (narrower Q)

you have the FD in place?

I will try unplugging my ultegra FD, but I have been told the brain of the shifting is in the FD on road components.
