I have some Paul Touring Cantilevers on my cross bike, with the stock Koolstop Thinline Salmon pads.

For anyone else running these stoppers, what pads are you using? I will only be using aluminum rims with this bike, so cartridge pads are not necessary, but I wouldn't mind having them for the ease in swapping pads.

Any suggestions are welcome

You're going to have a hard time finding anything better than those kool stops. In my experience, changing the pads in most cartridges is not significantly easier than just changing the entire cartridge. The kool stops are so good, dont change them.
