Am looking for large tubulars to go on my Trek Boone. What are my options? Most tubs seem made to UCI limits

Vittoria do some 29er tubs that might work for you (Mezcal 29x1.9, Saguaro 29x2.0) but I don't know of any Cross tubs that wide, 34mm is the top end for cross tubs.
I also have no experience of running 29er tubs on cross wheels so buyer beware!

Dugast sell a 40mm Rhino XL. Could that work?

Good call, at least for a front tyre - the Boone will fit a 47mm on the front anyway
Small bird on the rear maybe
