No need for as much 30 degrees of lateral float IMHO but a few degrees +/- 5 or thereabout should help prevent knee problems.
BTW, maybe you could also consider the 2005 Time RX series of pedals, the Cafe cleat system is great.
I recently had to walk back home for about 10 miles after popping a RD and they hardly show any wear and tear.
With the Look cleats that would have been a totally different story, a new set of cleats for sure.

Yes it's me. I really like them. Smooth entry and release. The float is perfect and they have a low stack height.
