My Emonda Disc is sitting at 15lbs 14oz, though I could get it down to 15. Beyond that requires some superlight components.
Lighter tubeless tires (-3oz total)
1oz of sealant per tire instead of 1.5oz (-1oz total)
Switch from ENVE SES 5.6 Disc with White CLD hubs to 3.4s with DT Swiss 240S hubs (-4oz)
Bontrager XXX integrated bar/stem (-3.5oz)
Lizard Skins DSP 1.8mm vs 3.2mm (-.5oz)
Bontrager XXX saddle (-2oz)
Lighter PM than Garmin Vectors (-2oz)

Still quite difficult with standard parts. I am struggling for the same reason, starting from a suitable lightweight, aero , tubeless, wide wheelset.

If you're about weight per dollar. Rose has either the X-lite CWX or the X-lite CDX at 6,95kg. So thats 15lbs and 5oz.
That's with weight to save on saddle, handlebar, stem and on wheels. As well as plenty of budget to do so.
Then again, you'd be missing out on that superbike cool factor, that an S-works or even Canyon can get you .

See my sig The current weight of the Endurace is 6.9 kg, incl garmin 520, so ready to ride. When I was toying with the idea of building a "do it all" bike, I put together a spreadsheet for an Eriksen build. This might be helpful to see the different weights that go into a disc build. I'm missing hydraulic fluid from this build. Also, I probably would be a little more conservative with the wheels and use Tune Mig70/Mag170 hubs instead of Extralite.
For reference, a 3T Strada would drop 50g on the uncut fork and 522g on the frame, which would put you in a respectable 6.5kg range.

I'm in the same position. I can achieve what you want but with DIY build with a workswell r081 frame. 6.5-7.0kg. Aero, disc frame.
For branded choices you will have to settle for aeroish bikes like emonda disc. The only aero disc I know is the aeroad and that thing is heavy.
Disc and aero both have weight penalties.
Giant is releasing their new propel disc soon. You might want to check it out. Also not to forget comfort with such a lovely allrounder. How about a trek domane disc? There you got comfort for a small weight penalty. That is maybe the last bike you'll ever need.

I have a 3T STRADA in size Large with the full aero treatment (3T Discus C60 LTD wheels, ARX LTD stem, Aeronova LTD bars, Panaracer Gravel King 26c tires, cages, THM Clavicula SE crankset w/ 52t Wolf Tooth ring Dura ACE ST-9170, XTR RDM9070, XTR 11-40t, Speedplay ti pedals. It is 15.2 pounds. I also have an EXPLORO using lighter 35mm wheels, Force 1x and it is 15.7 pounds. Sub 15# is just a wheel swap away and sub 14 pounds with superlight exotic bits.
