I have an old Tune speedneedle that I have stripped completely down to the carbon shell. It's tearing my shorts a little bit, and I would like to use it again, so Im thinking of repadding and recovering the saddle.
Any ideas on how to do this? I'm thinking some sort of foam for padding, but do you guys have any recommendations? I'm thinking about using a leather upper, and I guess I can glue it to the bottom side of the saddle and it will stick?

Thin 'minicell' or closed cell foam would be ideal. I used to use it for kayak outfitting and it is surprisingly durable. It's the kind of foam cheap camping mats are made out of and you can purchase thin sheets of it in small sizes. A bit of spray on 3M adhesive and it will be rock solid. Cover in whatever material takes your fancy.
