Would anyone be kind enough to tell me what types are available. I note that some Shimano inner cables come with coatings, and I guess these are best used with some outers but probably not others.
I've found SP41 and Optislick.

yes, some Shimano cables come with PTFE...not all. if you want that, you need to find the ones that state PTFE on the package. older cables used to be oiled or treated where you can feel it...but not in several years. the housing as a slick lining in it...and work well with the newer cables.

OT-SP41 cable housing is the same for all groups (Acera/Claris/Dura-Ace/XTR)
(little exception R9100: OT-SP41 used as main housing + OT-RS900 as cable extension for RD)
inner cables are different for different groups
polymer was introduced with 9000 series (7900 cables was PTFE )
(you get better shifting with new cables, no need to upgade groupset)
optislick was introduced instead of SIL-TEC on XT/105/Tiagra recently
