I don't know how long you've been riding but I still remember the days (1997) when I rode the Terrible Two double century (lots of steep climbs) on a 53-39 and 11-27. And my first tandem was a custom racing Santana that had double chainrings (55-42) and a 11-26 cassette. I went over some steep hills with no bailout gears. Twenty years ago there were no such things as a 36 or 40
I didn't convert to compact rings until 2007. So what gears did heavy cyclists use twenty years ago

I have been riding for about 20 years. When I was 170 lbs, I could climb mountains on a 53-39 / 11-25 combo. I am not 170 lbs anymore, and also do not see the point in killing my knees. Just because we did something back then doesn't mean it was a good idea

20 years ago. Funny, but that is recent. 20 years ago people used triples. Dura Ace had a triple crankset in the 1990s. Not sure about Record. Then the compact euphoria came along. People in the truly olden times used triple cranksets. Way back when the exact same shifters and maybe derailleurs shifted everything. No need for new parts. Today to get a triple you need new crank, new derailleurs and new shifters. Expensive. Probably why the compact craze is so popular. Cheap for bike companies to use compact cranks because everything is identical except the crank.

Why not get a miche cassette they do these sort of ratio's cost you less as well.
Finally did some long climbs on a 12 30t miche cassette. 12 13 14 15 16 17 19 21 24 27 30T. I use 41t inner ring on this bike and 20+% gradients are fine but i am a bit lighter than the last poster.

On one bike, I have Ultegra mid-cage RD + Wolftooth Roadlink + Shimano XT 11-40 cassette with a compact (50-34) crankset. On another, I have a 105 mid cage RD + SRAM 1170 11-36 cassette with a compact crankset. Both work fine in all combinations on the stand, though I try not to use the big big combo on the road. Here is what the 11-40 combo looks like:

If you use an xt m8000 or an xtr m9000 rear mechs you wont need a road link but you will need a jtek shiftmate to convert the cable pull. Also if you have di2 the mtb rear mechs they will work with 11 speed road shifters.
Mtb 11 speed cassettes will work on a 10 speed hub allowing you to use old dura ace or ultegra hubs.

I have three Sunrace CSRX1 cassettes. Two 11-32s for my CX, and an 11-28 on my road bike. They haven't seen a ton of use yet as the CX bike has been mostly on the wall, and it's on my wekeend wheels for the road so I can't speak to durability/longevity.
Performance wise, I'd say they are on par with Ultegra. I haven't had any issues with shifting aside from having to adjust rear trim when switching between wheels on the CX, but that could be the difference between the Shimano and Formula cassette bodies as the same cassette is on both wheels. For road, I have the SR on my HEDs and a R8000 on a Shimano hub and no issues switching between them.

Where can I order a bespoke Miche cassette? A real shame though they don't do anyting larger than 32t (would love to see a cassette with 25-29-34 at the end!)
Me, I'm bodging a 11-32 (105) and 14-28 (Ultegra) into an 11 speed 14-32. With 34/42 chain rings I can do a fairly comfortable (105rpm) 41 km/h, but that's only feasible for me with some tailwind or on a descent.
It does give nicely small jumps between gears:

With miche for Shimano 11 speed you can have 34t at the end but it should be 27t-30t-34t as the shifting Ramos are placed best for that and your rd is expecting that
The top jockey should track the cassette with out changing the distance from the cogs much
25-29-34 may shift but it is likely it won't be as crisp as what I have suggested it maybe quite clunky and slow. Custom does not mean cram 1t jumps at the begining then put the big gaps at the end. You end up with crap shifting under load then you complain it's the cassette, when it's the choice you have made.
Where can you get one try Google but don't buy simply because you want something that your rd is not meant to see.
To the other posters above. If you are going to use a wide range MTB cassette you should really use an MTB mech with it to get the best shifting. With the road rd watch the top jockey wheel, it won't track the cassette well. So do get that to work well you need Di2.
