When thinking of a racing tire I think of: supple, light and fast to name a few. the GP4000 that was mentioned earlier isn't realy supple. When inclined to like Conti, you might like the Grand Prix TT better.
Challenge Criterium is also an awesome tire.

Oh, what inner tubes are you going to use for racing?

Those look nice with a good TPI. Lots of love about for vittoria corsa and s works turbo as well it seems. I have no preference to conti btw, only used their mtb tyres before.
And I plan on using latex tubes

great, latex is great!
Tire wise, get some good race tires and expect to get 3000km from the rear tire, max.

S works turbo or Veloflex master are my go to for supple clinchers.

I really like the Vittoria SC (gum wall) or whatever they are calling he newest version. S-works Turbo have been really good for me this year, I've been using both the 24 and 26 (prefer the 26 on HED Belgium + rims). The Turbo cotton tires have a better road feel, but are massively more expensive. I've got a coule sets of those on race wheels and they're great.
Vittoria Open Pave get a solid vote for rough roads as well. They used to be my go to, but really the 26mm S-works turbo has pretty much replaced them for me (and they roll faster).

I really love my S-works turbo, I have used this race season, now switching to durano plus.
S works turbo, is running great haven't had a puncture yet, and they feel fast, and feels like having low rolling resistance

Depends on what weather you're racing in. Last season I raced on 27mm Paves, but probably 75% of my races were wet or has really rough roads. They are still my favorite tires.
