I had a Giant Defy Advanced that I was going to send on a diet, but some low life stole it. Now I'm riding my old bike and feeling the weight - a Carerra Virtuoso at 14.5kg....
I'm really feeling it in the hills. In fact, I almost don't want to ride it's fat derriere....

I have a few hundred £ set aside for the giant - should I try lighten the carerra or replace with something else low end?

I wouldn't bother doing anything to the Carrera, maybe look into something second hand.

Any advice on what might make a good base?

Lighten the Carrera? To what, 13 kg? Rather get a second hand CAAD12 with upgraded wheels. 7,7 kg for a grand. Or stretch to 1300 Pounds and get the Planet X gAlibier?

Use the Carera during the winter and look in Spring for a new bike.
In the meantime you hopefully can set some more money aside.

Seconded, you seem to live in the UK so autumn and winter is here to stay. No point in getting a nice bike now that you will hesitate to take out into the muck of November.
Sure, deals are not as good in spring, but there are always some to be had if you are patient.

Keep the Carera for the winter training and buy a 2016 bike on sale.

UK is correct. Indeed it's getting cold and wet out, so that's probably a fair shout.

At budget level, should I be looking at alu over carbon?

If you have a tight budget go for alu. But at the moment you have some shops and webshops with sales, so you might just look at your budget and get the beat deal.
for example: https://www.bike24.de/p1140176.html
8.12 kg-1200 GBP (instead of 1700 GBP)
http://road.cc/content/review/113257-ca ... -road-bike
or
http://www.bike-discount.de/en/shop/rac ... 24&o=preis
Depending on the type of roads that you bike alu can be very very different to carbon in terms of comfort.
