If it's about comfort then step 1 is dump the Conti's. They're excellent tyres for everything else but the ride feel is miles behind Vittoria or Veloflex.

An Open Pave would have good all weather grip and puncture resistance but if that's not a huge concern then I've heard very good things about the Vittoria G+.

The Open Paves have sadly been discontinued, but the 25mm Corsa G+ are exactly the same width as the 27mm Pave clinchers - I measured both on the same rim - and I couldn't feel a difference in ride quality.

Vittoria Corsa Evo 25mm run very wide.

I had the same problem on my Canyon bike. I swapped the single pivot rear brake for an older dual pivot caliper (found a NOS Centaur dual pivot rear caliper on Ebay UK, the model before the skeleton) and now I can run wider tires.
