Just replaced a 27 gram Campagnolo FD metal clamp with a 12 gram MCFK one. Instructions say torque to 6nm -- I applied carbon paste and torqued it down to 2nm. Can't get myself to torque it beyond 2nm and it appears to be plenty tight. Same with the MCFK seatpost clamp -- instructions say torque to 6nm. I torqued it down to 4nm with carbon paste and have ridden about 100 miles without slippage.
The carbon bands on these clamps are just so thin -- wondering if any of you who use these clamps actually torque them down to the specified value.

I have both and I torque them to 5Nm. I usually torque things to just below spec.

I just tightened until it worked. I used carbon paste. I really hate the torque wrench. I have no idea how accurate they are but my friend use's them and swears by them. Every time he uses one on his custom Viner I wince. I just go by feel. Been ok so far.
