2014 Super Record or 2015 Record?

That doubleclick you talk about... when you're changing from big ring to small it is intended to be "slammed" all the way, straight through the first "click" (which is redundant when on the big ring), until it hits the stop . The stop is merely to hold it up a bit so you don't throw the chain off the inside. In fact, I'm not sure you even need a chain catcher anymore with this derailleur, although a little added insurance is always good I suppose. And when in the big ring, there is no "trim" necessary as it should be able to cleanly hit all the cogs at the back with no front derailleur rub if adjusted properly. So once in the big ring the only time you should be fiddling with the left shift button is when you want to shift to the small ring. Just one push on the button all the way to the stop... boom and you're done. Don't even think about holding up on the first click.

I recently switched from a mix of SR, Record, and Chorus (all 2013/2014) to 2015 Chorus. I think it's an improvement. I didn't get the movement of the front derailleur at first, but as Calnago describes, now that I understand it makes complete sense. I love never having to trim in the big ring. Also, if anything, I think the shifting in the rear is a return to a more solid "thunk", back to the 10 speed Record days with the stiffer spring installed.
Anyway, despite the disclaimer I don't run the crankset or chainrings (I use a P2M on a Rotor 3D with Praxis rings), I believe '15 or newer is the ticket.

The only reason to go with the old stuff is if you really don't like the look of the new crankset/deraileurs.
I went from 2013 to 2015 and find the the FD is much improved. Trim not required and much better shifts. Everything else is aesthetic.

2015 for sure. Can always run a 2014 or before crankset with it. While I loved my 2014 SR very much so, and I never thought it needed any improvements, the 2015 stuff is no doubt an upgrade and performs much better. The downshift from big to small ring is something to get use to, but once you get accustomed to it I actually prefer it.

Not sure how you mean. I have had 2014 and now have 2015. The only difference I find is that the front mech shift is lighter.

Front shifting on 2014 is slower but smoother and more 'graceful' for want of a better description. 2015 is brutally efficient IMO. Rear shift is basically the same.

2015 but only because I love the 4-arm crank. But saying that it depends on your build as the 4-arm would probably look odd on anything retro.
