I would like my new disc brake wheels to be 'backwards compatible', so are all thru-axles standards convertible to QR?

No - 15mm Front and 12 X 142mm Rear will be compatible with QR providing the manufacturer allows for changing the end caps. The hub width and rear spacing is the same on QR and the above standards it's simply the retention of the wheel that changes.

You need to purchase convertible hubs such as DT Swiss or Hope, I'm not super across road wheels and convertibility so unsure if any factory road specific wheels offer this feature. It's much more commonly found on MTB wheels.

Other spacing standards such as wider rear 150mm used on some DH bikes will not be compatible due to spacing issues.
