That is just a metric threaded bolt (M5 I think off the top of my head). Most hardware stores, or a specialty fastener store, should have something that will work.

The stock one is Ti, should I go stainless steel or stick with Ti ?

Titanium is lighter than steel. This is Weight Weenies.
You know the answer.

Sure you can just use google with proper searchterm.
When you're in France look first for a French supplier.

-There are cycling related stores that sell these components
-There are specialized hardware shops.
-And of course ebay

Store in France

But there should be many other sources in France.

Hello, which type of bolt did you need after all?
By the way, in places like that (within carbon) is fitting grease ok to use or its better to have nothing?

Grease wont hurt carbon. The original bolt broke because it most likely was not grease. Still find it amazing that mechanics/people will build a bike and there will be ungreased stem/seatpost/bottle cage bolts.
