Dumonde for a long time, most recently their Pro X Regular. Switched to Morgan Blue Dry Wax about 3 weeks ago, and so far loving it. I always give the chain a wipe post ride, and the MB seems to pick up less grime. Lots of sand and grit on the roads here, so this is surely an advantage for chain/cassette/chainring life. I have to re-apply every couple of rides, but I don't mind. Clean and silent are a nice combo and worth the extra minute or two.

I use Oil of Rohloff. Made by Klüber who also make the grease for Ferrari fly wheels and Campagnolo bearings, so it has to be legit.... In practice, it's pretty alright with a thick consistency that lasts long and wipes up well during cleaning.
I found a chain lube thread on a motorcycle forum where several posters recommended GT-85 for chains. I've been using it for a few months and am pleased so far, okay so you have to apply it regularly, but it keeps the chain clean. I was on a very wet ride yesterday I'll check my chain later to see how it fared.
