Time has come to replace my cables and chain on my 11 speed super record. It seems to be variations on the original parts. For example ,is there a newer and older version of the record chain? Also it seems to be different version on the ergopower cables?

You'll be fine with pretty much any 11 speed chain and whatever cables you want, as long as they have the correct (Campagnolo specific) shape to insert into the lever. I use KMC for the chain and iLinks for cables with excellent shifting.
