Excuse the basic question - until recently I've only ever used Campag. Is the 11 speed cassette from the Shimano Ultegra (CS6800) groupset compatible with my Di2 9070 groupset?

Yes. And the CS-5800 too.
Even SRAM 11 speed is compatible

and even campag 11, many of use campag 9/10/11 hubs and campag 11 cassette with an otherwise entirely shimano 9000/9070 system because shimano 11 speed required new hub. it just works!

...but use a SRAM chain if you're using an XG1190, in my experience. The DA chain was noisier and changed less smoothly.

I did a ride with my campy Record11 chain with an Sram Red cassette.. my bike has never been quieter..
