I'm thinking about changing my 11-26 cassette to a 12-27 one.
If I change the cassette, should I add another link to the chain?

Thanks

It will most probably work fine. Check your current setup in the big-big. If the derailleur cage can still go forward a bit, you'll be fine.
However, the chain will skip over the cassette if one is worn and the other is new.

A one tooth difference would be a half link which is not possible on modern bicycle chains.

But as pointed out above the chain you have is likely long enough.

Ok, thanks for the advices.
Probably it will be fine without any change in the chain. I'll have to test it.
