I have the same bike and I am wondering how you got the stem so slammed without using the i-lock headset?

It was my assumption that the bikes that didn't come with the integrated bar/stem also didn't come with the i-lock headset.

Can't the i-lock system just be taken out and replaced with a spacer?

Yes it can be replaced with a standard headset cover, along with an expander if one wasn't already installed in the steerer tube (previous generations of Canyon bikes did not come with one). The only complication of course is the 1-1/4" steerer tube with severely limits the selection of available parts.
