How about the Ridley helium SL? Of the modern super bikes, id say it's the most conservative.
If you want steel or aluminum maybe check gaulzetti?
Or you could go with a custom build from any of the zillion builders and get just what you want... for a lot of money.

Yeah that's the problem I wasn't looking to spend heaps of dough. I just want something that I can slowly build up over time
