Velocity Escape or carbons tubulars?

I have a set of hubs that I found while digging through some stuff in boxes. The hubs are WI LTA 28 hole rear/AC micro
front 24 hole. Both of these are cira 2005. DA 7800 groupset.
I am looking at building a set of everyday tubulars. I am undecided between these two rims.
I know the escape are great rims and will last if built right. 24F 28R
As the carbons go I was looking at farsport 24mm 24 hole F 38mm 28 hole rear.
I am looking for the pros/cons of both rims/wheels.
I would also like some suggestions on the best build for the rears. Fronts will be radially laced. Spokes will be laser most likely. But cx-ray will also be an option.
I am 160# and ride mostly solo 40 to 60 miles on semi decent semi hilly terrain.
Aprox. weight of both builds?

As an everyday, lightweight wheelseet, I'd go with the escapes. They're proven, and everyday-wise, an alloy brake track will serve you better.

I'd go with the Escapes. Carbon isn't worth going for IMO unless your willing to get the well developed and tested options.

The Escapes are proven, and I think for the price they have much better value.
