Considering my first set of tubbies and a question I've never seen an answer for:
Do carbon rim surfaces wear when using the correct carbon pads?

There is some wear on the brake tracts, but certainly less than my aluminum wheels. One set of my Carbon wheels has ~11k miles on it, I can see some minor wear, most of that came from riding in the rain with grit on the brake pads.

Try Corima pads if you want zero wear. Otherwise whatever the manufacturer suggests.

rim wear happens very slowly on pavement. muddy cross racers can see rims wear significantly in one wet season or two.

Is that due to there being absolutely no braking from carbon rims to wear them in the first place?

The rim will get wear with any sort of use. If you use the right pads though, you can definitely minimize wear. I have been on some old beat up Reynolds MV32 tubys for 3 seasons now and I see no visible wear yet. It is very important to keep your pads clean and free of debris though.
