Well, even a flat stage can have 100-1000 vertical mtrs of climbing, but that doesn't really matter if it's e.g. false flat and wind in the back.
If you want to know it all, follow Thibault Pinot, Wilco Kelderman, Laurens ten Dam etc. on Strava.

I think total climbing is quite misleading. A bunch of little rollers can add up to a large total ascent figure but the peleton will just smash over them at 30mph average, so it's not really climbing.
Best way would probably be to just take all the categprised climbs and add them together. Maybe even just Cat 2s and above.

On strava you can view the weekly activity totals for an athlete so for Laurens Ten Dam on this years TDF
Week 1, Jun 30th to July 6th (excluding other activities that same week, just pure TDF mileage)
Total 240 miles in 9hrs 51mins, 17,892ft climbing
Week 2, July 7th to 13th
Total 733 miles in 27hrs 23mins, 30,522ft climbing
Week 3, July 14th to 20th
Total 707 miles in 29hrs 59 mins, 51,765ft climbing
Week 4, July 21st to 27th
Total 474 miles in 20hrs 13 mins, 39,402ft climbing
Gives us a total of 2154 miles with 139,581ft climbing or 42,544m if you are that way inclined. Or to put that in perspective the equivalent of climbing Mt Everest from sea level 4.8 times in 21 days.
LTD either didn't take part on the final stage into Paris or didn't upload the activity so that's not included
