There are countless places suited for road biking in Turkey. But you need to pick when to visit, as during national holidays the intercity roads are very crowded. Outside of those times, you will be okay if you stay away from the main roads.
The roads are generally bad, keep that in mind if you're bringing your own bike.
The Aegean region is quite windy. The region is hilly too,, but there are also flats along the coast.
That's all I can think of right now. PM me if you have any further questions.

Ok, this is not for comic relief :D but these guys seem to be a bike club in that region with some 70 members. If you post on their Facebook page, Im sure someone will reply (Turks generally will take every opportunity to do favours/be helpful)

but as Efe said above, I'm sure it will get very windy by the coast so leave the deep wheels at home..

The only pro continental team from Turkey is from Konya so I'm sure theres a link there.

lasly, Alanya and Marmaris are the two cities where the famous triathlons take place - Im sure there is a general tendency for cycling in those cities (which would have factored in the location selections)

I could recommend Alanya. Great weather 9 months of the year(it's waaay too hot in the summer) cyclist-friendly people, (generally) empty and good roads, great climbs. Saw Astana training there.
In the summer it is overcrowded with tourists though.

Destination, pleases me as there seems to be some good loops
With some good climbs.
