While we are talking about Kinlin rims I have Alchemy hubs laced to xc279 rims which are also very stout. The 31s were not around at that time.

But how much difference will there actually be on custom set vs lets say a fulcrum racing zero?

lots of difference. Almost any wide rim will improve ride quality over those fulcrums and you wont be any slower.

If you have to ask the question then you are seduced by brand names and marketing. A wider rim is a good thing. I think you would be better of with fulcrum racing 5LG's over the fulcrum Zero's.
