The yellow area is pretty polished now, while the green area is what the brake track would look like if new.

An article from Zipp says that "When the rider can see wear through the woven ply on the brake track" it should be replaced.

It's not worn, it's just very polished, still smooth and no lumps or cracks or anything like that. The wheels are 2 years old. It looks ok to ride to me but I've definitely noticed less power braking lately.

Still looks fine to me. If the braking is off have you checked your pads?

I just replaced the pads this week from Black Prince back to the Platinum Pros. Initial braking still felt a bit weak but maybe there's a break-in period?

I am not sure you are advised to use Black prince. I am not sure, but i think Zipp wheels are not approving other pads than there own.
Why is this relevant you ask?

Because, brake pads which is not working with certain rims will damage the rims.

That's a good thing! Corima for instance will not approve SwissStop at all.
Mavic only approved the yellow version and Black prince when i asked.

I usually check these things up, but as mentioned above, ... i was not sure how Zipp advised.
