holy shxite it looks wicked. I am so glad you got rid of the conti tyres ( despite riding them myself ! ) the veloflex are at home here.

Now, should I go for tan or black sidewalls?
(having thoughts that with the gold colored fonts and spokes perhaps black sidewalls would be a better match?)

I am not a fan of super-retro builds but that is freaking awesome. One of the nicest bikes on this forum, congratulations.

Two comments
1)KCNC or extralite streeters skewers have much better clamping force than the stock lightweight skewers and are as light (KCNC) or lighter (-15g streeters)

2)If you changed to a garmin with outfront mount you could lose that ugly wheel speed sensor on your forks and just run gps.
