quite impressive. i like canyon, first of all. it's smth like a work machine, no myth around it, no must-have factor, it's a pure machine.
i must say, i like your bike with the deep-v wheels. i don't like it at all with the lighter rims. the frame is way too fat for such skinny rims... but in the deep-v trim it looks pretty cool. however, there's 2 things i'd change:
1. seatpost: it may be light, but the clamping section on the saddle rails already show that you should use a seatpost with setback. get yourself a bontrager xxx lite seatpost and have it sanded and custom-painted with with a matte clear coat, no decals on in. mine weighs 130g in 27,2mm and 250mm. not bad for a setback seatpost, and i would call that a bargain too!
2. stem: i don't know why, but the ritchey stem is nothing that i fancy. i'd prefer a syntace stem, either an f119 (for 1.5" steerers) or an f109 (for 1.25"). your choice. the naked silver clamp looks a little too naked to me...
apart from that i would definitely ride that bike!
