I built a top of the line fitness bike two years ago. Not as good as this one, but still great. Sirrus carbon frame, Magura MT8 disc brakes, Tune carbon wheels, Schmolke bits...
I ended up selling it. It was far too nice for commuting (think rain, salt...), I was afraid of leaving it anywhere even with a good lock, and the flat bar was incredibly frustrating for sporty rides in the countryside (the headwind, oh god!).
I sold it to an old guy with a bad back, and now, I'm back to my beater MTB for the city.
Even if the owner of the bike has disposable income, I just don't see the point anymore. If you want to spend tons of money on a flat bar hybrid, get custom fenders, a rolhoff rear hub, a belt drive and supernova lighting. But dont try to turn an hybrid into a race bike wannabee.
