Saddle: http://www.aliexpress.com/snapshot/6461887806.html. Saddle is highly recommended. Excellent quality and just enough padding for comfort.

Bars: if you look, they're all over eBay. I apologize - I'm not comfortable recommending these - they're quite flexy in the drops. Although they haven't cracked or anything of the like, I'd be very careful with the purchase.

Wow thats a nice bike I do like these Scotts. I have the same bars and yep threading cables is a nightmare, easiest way I found was to push cable right in to the exit hole then insert a very thin screwdriver inside the cable and hoik it with some 'major' force through the exit hole. Then tape the second cable to the first and use the first to help pull/push it through. Eventually I had two cables per side :)
Not easy though!
